3 Bean Salad

- 1 can low sodium green beans, drained & rinsed
- 1 can low sodium garbanzo beans, drained & rinsed
- 1 can low sodium kidney beans, drained & rinsed
- ½ cup chopped green peppers
- ½ cup chopped green onion
- ½ cup chopped celery
- 2 oz. diced pimentos
- 1 tablespoons agave (or sweetener of choice)
- 2 tablespoons water
- ¾ cup lemon juice
- ½ teaspoons salt
- 1 tablespoons canola oil
Drain and rinse beans. In a large bowl combing beans, peppers, onion, celery, and pimentos.
In a separate bowl, mix agave, water, lemon juice, salt, and oil together. Combine all ingredients and marinate overnight.
Drain liquid before serving or use slotted spoon.
