  • 1 can low sodium green beans, drained & rinsed
  • 1 can low sodium garbanzo beans, drained & rinsed
  • 1 can low sodium kidney beans, drained & rinsed
  • ½ cup chopped green peppers
  • ½ cup chopped green onion
  • ½ cup chopped celery
  • 2 oz. diced pimentos
  • 1 tablespoons agave (or sweetener of choice)
  • 2 tablespoons water
  • ¾ cup lemon juice
  • ½ teaspoons salt
  • 1 tablespoons canola oil

Drain and rinse beans. In a large bowl combing beans, peppers, onion, celery, and pimentos.

In a separate bowl, mix agave, water, lemon juice, salt, and oil together. Combine all ingredients and marinate overnight.

Drain liquid before serving or use slotted spoon.
