Fiber Rich Brownies

  • 1 (15oz) can low-sodium black beans, drained and rinsed
  •  ¾ cup eggbeaters or egg whites
  • 3 tablespoons canola oil
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 3/4 cup sugar
  • 1/8 teaspoon salt

Preheat oven to 350° F.

Pour beans, eggs, oil, salt, and vanilla into a blender or food process. Blend until smooth.

Add the cocoa powder and sugar. Blend mixture until evenly mixed.

Pour mixture into a greased 8 by 8 glass pan. Bake in oven for 30 minutes, or until toothpick comes out clean.

Cut the baked batter into 9 evenly sized pieces.

 

This recipe is perfect for anyone having gluten intolerance as it contains no flour.

Diabetic Note: If you have diabetes, cut the brownie in 1/2 to reduce the effect it will have on your blood sugar.

We just made these brownies, and my whole family liked them. Even my 3 year old who is very picky liked them. I doubled the recipe and it fit nicely in a 13x9 cake pan.
