Raspberry Oat Bars

  • 1 cup               Frozen raspberries
  • 1/3 cup            Florida crystals organic sugar
  • 1 t                    Lemon juice
  • ½ cup              Unbleached white flour
  • ½ cup              Whole wheat flour
  • ¼ t                   Baking soda
  • 1/8 t                 Salt
  • 1 cup               Old fashion oats
  • 6 T                   Smart Balance Light Buttery Spread

 

  1. Preheat oven to 350 degrees. Spray an 8-inch square pain.
  2. Thaw raspberries and puree in blender.
  3. In a small pot combine the raspberries, Florida crystals, and lemon juice. Bring mixture to a boil for 2 minutes stirring regularly. Set aside to cool while following next steps.
  4. Mix together the flours, baking soda, salt, and oats. Now add the butter and mix until crumbly.
  5. Press dry mixture into pan. Top with raspberry mixture. I like to leave a slight edge around pan so doesn't stick to sides.
  6. Bake for 30 minutes. Allow to cool before cutting bars to ensure raspberry mixture is firm.  Cut into 6 equal bars and serve.

Since you are not using yeast as a leavner, use the whole wheat pastry flour - low gluten content, but full fiber and not as heavy a flavor.

White flour is empty calories, why use it?
Use the whole wheat and get nourishment as well as fiber.

Great recipe, but why bother using any white flour at all? Whole wheat tastes great!
