- 2 cups cooked whole-grain brown rice, no salt
- 1 1/2 teaspoons extra-virgin olive oil
- 1/4 cup diced onion
- 1 garlic clove, minced
- 1/4 teaspoon salt
- favorite green herbs as topping (optional)
In a medium saucepan, cook brown rice in unsalted water according to the package directions. In a large skillet, saute onion and garlic in olive oil until tender, about 3-4 minutes. Add rice and seasonings. Mix well. heat through and serve hot.
