Zingy Marinara Pasta

Cook pasta according to package directions and drain. While pasta is cooking, in a medium saucepan, saute onion and garlic in oil until tender, about 3-4 minutes. Add the rest of the ingredients to sauteed onions and garlic and bring to a boil. Reduce heat and simmer sauce 10 minutes. Pour sauce over pasta. If you have diabetes: Cut the portion in 1/2 for better blood sugar control.

This is one of my new favorites! I never really know what's in all those store bought spaghetti sauces, so this was a great way to control the fiber and nutrition content. It's very easy and fast to prepare as well. I halved the recipe, and it made enough for about 3-4 servings. I was shoveling it in like there was no tomorrow! Yay for fiber!
