- 8 whole wheat tortillas or La Tortilla Factory Multi Grain Soft Wraps
- 3 tablespoons extra-virgin olive oil
- 1 1/2 cups red onion, sliced
- 4 cloves garlic, minced
- 2 cups green pepper, sliced
- 2 cups yellow pepper, sliced
- 2 cups red pepper, sliced
- 2 cups napa cabbage, chiffonade
- 1 large diced jalapeno pepper, seed removed
- 15 oz canned low-sodium pinto (or black) beans, drained and rinsed
- 1/2 teaspoon cumin
- 1/4 cup cilantro, chopped
Saute all ingredients except for tortilla in olive oil until desired tenderness. Place in warmed tortilla and top with your favorite toppings.
Top yoru fajita with your favorite ingredients, Here are some of our favorites:
guacamole ole, zesty pico, salsa, lettuce, tomatoes, black olives

Wonderful flavor. Good left over if you skip the green peppers & use only red and/or yellow peppers. We thought this would be too dry, but it was perfect. We topped with avacado and olives.

Great recipe. Did not miss having any beef or chicken in the wrap. Very tasty.
