  • 20 oz (1 1/4 lbs) raw spinach (about 20 cups)
  • 1 garlic clove, minced
  • 1/2 cup thinly sliced onion
  • 1/2 cup thinly sliced red bell pepper
  • 3/4 tablespoon extra-virgin olive oil
  • 1 1/2 teaspoons garlic and herb seasoning (salt-free)
  • 1/8 teaspoon salt

Wash spinach. In a large skillet, saute garlic, onion, and pepper in olive oil until tender, about 4-5 minutes. Add spinach, stir together, and cook until spinach is wilted, about 3-5 minutes. Mix in seasonings and serve hot.
